It's not that hard. Just grill some veg that you would eat too. Ask him what he likes.
Canned black-eyed peas, drained and rinsed, tossed with some chopped bell pepper, sliced red onion, chopped celery, dressed with olive oil and red wine vinegar.
Grill some corn and slice the kernels off the cob. Grill some cabbage wedges and chop that up. Toss the cabbage and corn together and dress with some lemon juice and olive oil.
Slice an onion and saute in oil with some chopped garlic until it is soft. Put in some cayenne pepper and smoked paprika and let bloom in the oil for about 30 seconds. Add 2-3 cans diced tomatoes and around 1/2 lb frozen okra, cook until thickened.
Good on you for being a good host and taking all your guests into account.
For everybody getting huffy that a vegetarian or vegan wouldn't cook meat just for you, think for a second - would you really want a person who hasn't eaten, bought, or cooked meat in 10+ years to buy and grill you a steak? That sounds like a way to get somebody to buy a select filet (because they've heard of a filet, and select is the cheapest option) cooked to 145 (because that's the USDA guideline for safe temp of beef). Personally, I'd much rather eat good food without meat.LBGE

We will have veg options available. We eat lots of veg dishes anyway, and most of them are vegan, not by choice, but they just turn out that way. If the guy is super hardcore about it, he'll bring his own dish, to share, I hope. I'm not making a dish that is only for him. And I'm not making Soy Pulled Pork either. My friend and coworker is vegan, and he's cool about it. He doesn't push his beliefs on me, or persecute me for eating meat, and I don't taunt him about eating beans and peanut butter all the time.

I'm enjoying all the veggie sides suggestions here. We eat lots of veg and new ideas are welcome.Wisconsin, lbge, MM, kab, pig tail flippers, bear claws, and more rubs than I will admit to.
