Spaghetti Squash Lasagna Boats

Roasted some spaghetti squash halves on the large @350-375 indirect for about 1:15 till tender. While that was goin I made a sauce for the boats,(Recipe later) and sautéed some kale. Once the squash was ready I scraped the strings out & mixed with the kale and some ricotta cheese. Dumped that in the scooped out squash bowls and topped with the sauce.
This is right before they went back on the egg to get nice and warm

After getting nice and warm I added another layer of ricotta and moz on top

And the final product.

This is was a very good and very light supper that will be repeated. Only change will be to do the filling in layers more like a traditional lasagna. While eating I ran out of cheese and sauce which was no Bueno. And the recipe for anybody that is interested.
