Hot Smoked Italian Sausage and Tortolleni

Publix Italian Sausage. Sauteed onions, fresh garlic, and pickled tomatoes. The pickled tomatos really pump up the tomato taste and the pickling spices add some spiciness. Smoked the sausage with oak. Pulled together with Buitoni tortellini.

What temp do you smoke the sausages? 250 for 90 or so?

Cooking them this way has an interesting effect on the texture and snap of the case.
