Beef Ribs -Question

Can anyone point me a site or have some great ideas on how to do Beef Ribs - I can not seem to find one here or on the other sites -lots of great ones for every thing but Beef Ribs. I spend some time working thru Texas and fell in love with them - At the all you can eat at The County Line - stooping for gas and Ribs/Sauce at Rudy's and the many great BBQ in the Austin area[p]As they say in Texas "Salad is what Food eats !!"[p]Thanks everyone and have a great Canada Day and July4th this weekend[p]John

John , first and hardest is to find some good ribs that have not had all the meat carved out of them. I remove the membrane on the bone side, this can be a pain. I also remove any chunks of fat. I cover them with a rub, put them back in the fridge for a few hours before cooking. Get the temp to a steady 250*. Cook indirect with a plate setter if you have one. Place a tray to catch the drippings on the plate setter. I use a little hickory wood also. I cooked 2 slabs a couple of days for 6 hours and no turning. I add sauce about 15 minutes before removing. jbrodie, Thanks everyone for all the help !! I'll never use a gas Grill again - and my wife kids and neighbour agree ..bnut its costing me a bundle in beer !!! The BGE fires up and every neighbour for 2 blocks "happen" to drop over !! lol[p]John
