I'll be cooking crawfish today at some point. Have 81 pounds, plus veggies.
Anyone have any suggestions as to an ideal time to shoot for?
I was thinking about 5PM as a start. I'll be cooking two batches and the second would come out around 6PM, give or take.

On a positive note, the boss man told me at 10:45 to head out if I didn't have anything pressing. So, if I can get my $hit together we will hit the road earlier than expected. Still won't make the crawfish time though. I'd have to leave now.
