Slow Cooked BBQ Chicken,Smoked Potato Salad and Baked Beans

Started out with a 5lb yardbird that I split and removed the keel bone. Rubbed with a 50/50 mix of Bad Byrons and Dizzy Dust cause I like the peppery flavor of BBBR on chicken. Chicken was mopped bout every 30mins with a mix of vinegar, apple cider,a homemade bbq sauce and red pepper flakes.
This is after the first flip about 2hrs in running at 225° raised (3" above felt) direct use cherry and white oak for smoke.
Meanwhile the small has potatoe duty and is cruising at 275 indirect with cherry smoke
After a 2 1/2hr smoke the potatoes were rough cut and mixed with green onions,parsley and kalamata olive and a dressing of EVOO, Dijon mustard and dry mustard seeds
Chicken is back to skin up with some baked beans still underneath grabbing some chicken goodness
Plated up
I'm stuffed to say the least. Everything tasted great and the chicken was very similar to the old concrete block pits that I helped cook on as a teenager Brought back some good memories!

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

@bhedges1987 - this is what I was talking about earlier in the day. I would gladly spend the 3 1/2hrs to get this kinda taste from a sheeken on the egg.

That looks amazing @Mattman3969. I don't think I have ever slow cooked yard bird before. I am definitely going to give this a try. The potatoes look crazy good as well. The olives are an interesting combination. I am stealing those as well. I am thinking I might add some feta cheese and drizzle with balsamic.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

I have never slow smoked chicken before, but this sure makes me want to give it a try. But the killer is that potato salad!! Wow, that looks sooo good!
Here's another warm potato salad if anyone's interested. Can be refrigerated and eaten cold or reheated of course, but I think it's best when it's just made and still warm.
I hate it when I go to the kitchen for food and all I find are ingredients!
