Mm mmm good. Indirect took forever. Pulled at like 137 glazed with a spicy peach and ginger jam. Cranked up the heat and seared them off. Glazed with a little more jam. We didn't even finish the big one after eating the sausage appetizer. Only gripe might be that since they were so thick you only got so many bites of the tasty crust.

I would say the whole cook took around an hour and a half. Indirect was around an hour or so at like 275. Then the sear was around 10 minutes, I just seared both sides and edges till they looked good.
