Drunken salami and a few pies

Tried the drunken salami recipe posted here a few weeks ago, really good, simple, unique appetizer, will add this to the rotation. I tried with salami and with jalapeño summer sausage, both good, but the dryness of the salami was better.


Then went and made a bunch of pies, a couple of Thai chicken with a coconut peanut sauce.

Grilled eggplant, basil and mozzarella.

Deep dish pie with layers of rosemary ham, grilled eggplant, cheese, topped with fire roasted tomatoes and fresh mozzarella.

...and then leftover ham and mozzarella pie.



Then went and made a bunch of pies, a couple of Thai chicken with a coconut peanut sauce.

I used peach instead of apricot and may have been more liberal with the whiskey.

We usually just marinate and grill chicken with some spices, then slice and use for the Thai pizza, but this time we used the chicken from the lettuce wrap recipe we use and it was a huge upgrade. Last time we made lettuce wraps we made lots of extra chicken and froze the leftover, that's what we used this time and it held up perfectly. We usually bump the mixture the chicken gets cooked in by at least 50% or it's too bland.
