Just some simple grub. Done in the style of Dixie.

The past 3 days has been real rainy and windy and I haven't been able to get out much and cook. Today I bit the bullet and fired the BGE up, weather be darned. I chose things that I could cook real fast.
I started with some mushrooms that I stuffed last night and let sit in the fridge over night to set up. The stuffing is nothing fancy. Lump blue crab meat and Jimmy Dean hot sausage.


Last night while doing the shroons, I went ahead and did the first cook on some twice baked potatoes. I kept them simple as well. Simply stir in some Jimmy Dean hot, some broken up bacon, cheddar cheese and parsley.

For the wings, I thought I would go atomic. I like my wings like I like my women. Real F'ing hot. A simple overnight marinade in liquid crab boil and pepper flakes.

Thought why not and threw on a few sausage for good measure.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Made a couple of small steaks too. Used the spider and Weber sear grate. Used only Omaha Omaha for seasoning.

I thought the first batch of goodness was a home run. Even without seeing a plated shot of the steaks I would imagine they were spot on. You're just rubbing it in at that point. Great stuff all the way around.Stillwater, MN

Outstanding cook! Everything looks great. Kids came over and I've been in corned beef and cabbage land for the day in honor of St. Patrick's day coming up this week. Pouring rain here too off and on, so cast iron was the cooking method of choice for us today on the kitchen clock.

I thought it was prolly the Weber grid. I've thought about getting one because my grill marks skills are diminished with alcohol consumption. I'm not sure it would fit the XL spider. I think I'll just save my money and practice more!Flint, Michigan
