We decided on the bacon-wrapped chicken breasts recipe that came with the grates. It is simple: salt, pepper, bacon, chicken.

I brined the chicken for 90 minutes and skipped the recipe salt. A dome temp of 350 gave a grate temp of 500 in the center and 525 in the back right corner. The cook took about 20 minutes, the breasts were pretty thick. One of them got done faster and was a bit dry @180* (Mosca got that one), the other two were (reportedly) excellent.

    That's a nice looking meal.  I've debated buying the grill grates, but l haven't pulled the trigger yet.

    Any road will take you there if you don't know where you're going.

    They'll take some getting used to, it's all about temperature after all. I am glad I bought one of those infrared thermos a couple years back. And I think I will turn them upside down and use the flat side a lot.

    I found that it takes 4-5 cooks not only to get used to the temp change but several cooks will season the grates. They will be black in appearance and totally non-stick without oil or spray. I just wire brush mine and use the included tool to clean the valleys.
