    @CtTOPGUN ... if you see a meat market with beef short ribs, they were probably delivered to the store with two four-boned racks to a cryovac package.  The "butcher" unsealed them and cut them into smaller portions 'cuz that's what the public likes/understands.  Talk to him and you might get a good deal on the entire package.  Since he can simply hand you the cryovac package and not have labor involved in cutting it up, and risk spoilage due to it not selling, it's a good deal for him.

    Outstanding friend! Beef ribs are a great meal and a fun cook. I know they are a favorite of mine.

    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
    "Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

    Restaurant Depot has locations in Hartford and Orange (near Milford).  They will probably have the Chuck Short ribs and Plate short ribs.

  • 3.things I think I like about you JdoubleH,State Fan!,Egger! Beef lover!You cannot be all bad!!! Haha! I saw the reference to the Memphis weather.I live just South of the border,in Hernando.We have a meat market here that carries the beef Dino bones too.Charlies is a cool butcher shop too.

    Wow! I'm honored, SGH! Thanks so much! Tonight, I have one monster bone and one small bone left. I was cooking a pork loin roast for my mother in law, so I tossed the leftover bones on there and mixed up a little glaze with acv, oj, red pepper flake, cayenne and sweet baby rays. Glazed the ribs up... Should be awesome.
