My Sunday cook 2 days late

On Sunday I put up a pic of all the eggs getting started and never finished the post because things come up.
Reminder pic
As the story goes. The mini is on searing duty with 2 11oz filet mignon

The small is cruising at 25O with an oak chunk getting ready to roast the filet because I like this method better than reverse sear

The large had the potatoes until ready to turn into twice baked potatoes and haricot verts wrapped with perscuitto
And plated with a chimchurri for the beef and a lemon aioli for the beans

@Mattman3969 I am curious why you put the potatoes in Pyrex instead of straight on the grill. I'm assuming it was simply for convenience. If there was another reason please share.Coleman, Texas

Had to come back and look again at that great looking plate. Going give your Sear & Roast a try on my next Filets, it that your go to for most cuts or just filets?
