The Great, Good, Bad and the ugly......(lots of pictures)

(The great) I had the honor of hosting Brent @bgebrent and his lovely wife here in Columbia. We had a great time keeping warm out by the fire pit.....on what proved to be a beautiful (Friday) afternoon and evening. Of course we kept our eye on a BGE cook....while consuming a few adult beverages. Talk centered around our teams game the next day, along with Egging, sports (trivia), and a lot of laughter (and maybe even a few lies). We enjoyed the company of our wives and consumed great food, drink and conversation.
(The Good) We cooked a SRF Pork Collar that had been brined for 24 hours (6% salt give or take), Garlic, Brown Sugar, Rosemary, Lemon, Oranges and fresh ground pepper. Applied a pork rub of unknown origin (given to me by my son).
The collar was smoked with a blend of hickory and pecan. When it reached 185....where we pulled and let rest for about an hour. We then sliced and fired up the ol cast iron skillet with a butter and olive oil mixture....and landed on a nice little crust.
Mmmmmmm........
The plate up consisted of the pork colar, South Carolina low country hash and rice.....and some some coleslaw (not Chick-Fil-a) to make it healthy.
No southern dinner would be complete without a egg baked dessert.
(The bad) we took in the South Carolina vs Kentucky basketball game Saturday afternoon. My boys got blown out of the gym. Kentucky is clearly a much better team who is hitting there stride.
(The ugly) We witnessed Coach Calipari have a huge meltdown and ejection from the game.

We had the makings of a great visit.....Good friends, good eats....and some ok sports....(JK Brent). Looking forward to our next meeting. Thanks for allowing us to share our time with you all.

I'm a fellow UK fan of bgebrent. Still don't know what that meltdown was about. Never seen him so mad. I do know that a--hole ref, Sirmons, is getting a lot of bad press for this and previous examples of his attempts to be the show instead of the game. Can't really argue with the 2nd T, other than there seems to have been little or no reason for the first.

@northGAcock and his wife were the consummate hosts! We were treated like family and fed like royalty! And his Bloody Mary's are the stuff of legend. It was a truly great time. The ballgame, well, I enjoyed it more than brother northGAcock but he was a good sport about it! We hope to do this again!

Awesome post. Everything was on point....except for the game. We played like a weak high school team. About that hash...
I looked up the low country hash. I never heard of it. Saw it compared to Brunswick Stew which I am a little familiar with. But the more I looked, the more interesting hash is. Apparently many different styles and almost exclusive to South Carolina. Found this cool documentary.
