Weather guys were wrong (a shock, I know). It was not -9° this morning as they predicted. It was -12°! And, no, I did NOT cook breakfast on the egg.
I hate it when I go to the kitchen for food and all I find are ingredients!

Thought I would update my previous post with some finished pics. This was a prime 14# packer brisket. Salt & Pepper day before, and reapplied right before putting it on. Temp was about 200-250 throughout the cook as it dropped a little overnight. The cook took about 14 hours, and probed easy at 192*, I did not wrap it till it went into the cooler for 6 hrs before it was cut. Wood was cherry with a chunk of mesquite. This was the best brisket of the five or six I have cooked, it was moist, tender and flavorful. Made burnt ends of the point, and they turned out very good as well.Cashfan said:Sorry about the photo quality; it was cold and I was tired.

This was my first prime brisket(i think). It was a textbook cook, which is also a first for me. My other ones finished much quicker, or took way too long, and were dry. I am sold on prime brisket, especially when it can be bought for 4.99/lb.

YukonRon says to post, so here goes. I'm a bit overwhelmed by some of the cooks shown above.
As stated on my brisket thread, that wind speed was a damn lie. Froze my a$$ off.
Seemed to recall bonus points for old school thermometers. I'll need them.
And here's the brisket. My 1st.
Had to sample some, the remainder is for a pot-luck supper of old friends tonight. Will try to get more meal pics, but the food doesn't last long with this bunch.
