Brisket cut decisions

Hello good people!

I picked up a large brisket today that was about 19lbs. I am having guests over next Saturday and am debating which half I should save for next time and which half I should cook for the guests. I am used to whole briskets with the point and flat but today's purchase was a lengthy brisket totalling to 31".

I like these guests so I want to impress them with the better cut of brisket!

  • The top part looks like a whole packer, I'm not sure what the 2nd half is, could still be part of the flat and then some of the short plate .   I would cook the top part with the point.

    I'm with the good admiral here.  That said, I have not seen a brisket with that sort of length.  Perhaps @SGH will care to offer his insights.
