Learning about pizza from a Brit? Who'd a thunk it? :) Interesting video, thanks for posting!

I hate it when I go to the kitchen for food and all I find are ingredients!

Interesting thought about putting the fresh tomato stems back into the bag of fresh tomato sauce.

Yeah, and I also thought it was interesting that he let the liquid drain out of the tomatoes and then put it right back in in the pressure cooker.

Makin' me want a pizza though! Been a while since I had one!

Also the extra time to season with fresh herbs and slow roast the tomatoes used to top the pizza.
Did you check out the hamburger video?

Agree, both videos are long but really have great thought involved in the process to make the best. I had some down time at work yesterday.
Both the pizza and burger videos were very interesting to me.

  • Blumenthal has a show on Gusto TV. He acts a bit of a wank to me but he does some neat stuff. Modernist cuisine type of stuff.

Haven't watched the burger vid yet.

My next pizza will probably be sauced with Lidia Bastianich's marinara rather than Blumenthal's method. That stuff is AWESOME!! Canned tomatoes, garlic, oil, red pepper flakes and basil. http://www.seriouseats.com/recipes/2007/03/lidias-marinara-sauce.html

As for Dominoes, I had one. Once.

I have made Lidia Bastianich's marinara a few times and it's fantastic and simple.
