Finally...Maybe...Hopefully...

Not sure how the outcome will actually be, but it looks, smells, and feels awesome. I don't have that much experience with brisket yet, but my first few were pretty good, but definitely left room for improvement. Im pretty excited about this one. Nothing to do now but wait until kickoff to slice it up, I'm predicting a monster game by Peyton!

    Looks like a great cook to me but I'm in the middle of my first attempt today. Here's hoping Peyton goes out on top, not sure he can make it through another year in the NFL.

    Good luck on your cook, I'm sure it will turn out great. I just kept a close eye on it from 190 and up, probed well and had a nice jiggle to it. I think I started with a better piece of meat this time though, which everyone says is really half the battle. 

    Yeah I think he's probably done after this year, but you never know. I just don't want to see them go out to NE.

    That looks outstanding from the outside. Definitely show us a sliced pic.

    As for the game, I married into a Boston family so I have to be a Patriots fan and while I generally like them, if it were not for my marital status I would probably be pulling for Peyton today...

    Turned out great! Flat was good, maybe a touch dry, but I would say it's my best yet. Paired it with some homemade 3 cheese bacon mac and cheese and sweet and spicy green beans.

    Looks like a home run from where I am sittin.  I agree with @Chubbs that crack n' cheese pie looks crazy good.


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    Thanks! Yeah the mac was fantastic, it could be a meal on its own. 

    Fresh moz, sharp cheddar, parm reg, spices with fresh herbs and jalepenos in the cheese sauce. Topped with Italian breadcrumbs and bacon!
