Cedar planked salmon
cedar planked salmon. Half the filet was rubbed with DP shaking the tree and the other half with DP raging river.

I have planked a lot of salmon (whole side of fish)on Weber but only a few on egg. We're talking presentation here. I don't like over cooked salmon but for presentation I like a darker appearance on the top. Not happening on my egg. I cook 12 minutes max on hot (425) fire. 15 for really large slab. Any ideas how to darken up without over cooking? Pics here appear dark. Thanks

Will sugar get hot enough to darken on a planked piece of fish, before overcooking it? It works beautifully in frying or direct grilling, but I have my doubts when the fish is planked.johnnyp said:pgprescott said:
