simple Sunday afternoon chicken

Chickens were on sale this week so we loaded up. Saved this one for Sunday dinner. Short brine in OR Game Changer, seasoned with a combination of Kosmos Dirty Bird and Killer Bee Chipotle then glazed with a homemade sweet vinegar sauce. Cooked raised direct at 300 degrees for about 2 hours.

The color on those birds is wonderful. If we eat first with our eyes, then that is a banquet!

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
