water pan / drip tray / pork riibs

Do you use a water pan when smoking pork ribs?  beef ribs?

I have always used one on pork butts and beef briskets, but not ribs.

    As with @paqman - Air gapped drip pan with every indirect cook -no liquid.  The challenge with the water or any liquid in the pan is that it acts as a heat sink (consuming BTU's til it has evaporated) unless you maintain the liquid.  If you don't then once the liquid is gone your temperature will rise as the energy to heat/evaporate the liquid no longer has job so it just cranks up the internal temp.  More than enough for a Sunday PM.  FWIW-

    Use a pan of BBQ beans to cook under the ribs. It works out pretty nicely.

    I def do with beef ribs as there is significant fat / grease dripping. I cook my pork ribs horizontal in a rack indirect. Seldom use a drip for those.

  • I just had my best rib cook on the egg to date  this past Sunday. 2 slabs at 275 indirect over apple wood for 4 hours.  The last 2 hours wrapped.  I did not use a water pan.
