Couple Chuckies North Shore 3 way Style
I'm doing a couple 2# Chuckies today for sammies... Doing a pseudo pepper stout beef... Smoked with oak till 165, then in a pan with beer and James River... Served on a roll with more james river, cheese, and horseradish mayo... Kind of a roast beef 3 way for you North shore guys... Chuckies have mustard, cowlick and Toronto steak seasoning. Comments

Plan was to put Chuckies on 270ish dome till they reach 165 IT... I ended up taking them off at 145IT due to time constraints... Put in an pan with one Sam Octoberfest and half a bottle of bbq sauce + some worcestshire.. Covered pan with foil and back in the egg.. Bumped the temp to 375 till Chuckies were 205-210 and probing like butter... Pulled a little earlier than I would have liked 200, but it was what it was... Chopped the beef instead of pulling and served on ciabatta with james river , provolone and horseradish mayo... My take on a North Shore roast beef 3-way... Take off to landing was about 8 hrs.jaydub58 said:@Phatchris, how about posting your full process?
