Anyway that's the bigger issue for me with ruling out the cow, great spectrum of meat & equally great on dairy products. I'd sooner eat any cut of pork over beef but life with cheeseless pizzas would be unlivable.

Here in AZ, they can graft fruit trees to get lemons and limes off the same tree. They've been doing that since I got her 20+ years ago.
By now shouldn't they have figured how to get bacon from cows?

Gwaltney makes a really good beef bacon, certainly not hog bacon but it's pretty damn good in its own right; has some similar characteristics texture wise though if bacon bacon is the deal breaker it wouldn't be an adequate substitute.blasting said:

Pig for smoked shoulder, pig shoulder for sausage, pig ribs for ribs, pig belly for bacon....pig intestine for casing....
I love cow for steaks and brisket but pig is so much more versatile. Im assuming you only use the animal to consume it after it is dead so milk production of cow is not an option
