Egged a batch of pig shots for a Rose Bowl party we were invited to last week.
Jalapeno sausage cut up into discs, wrapped in half a strip of bacon. Shredded cheddar (because that's what I had in the fridge, brown sugar with cayenne mixed in, and dusted with DP Pineapple Head. Raised indirect at about 325°F until the bacon looked right.
You can't see them in the pic, but I had a few half-strips of bacon which I dusted and threw on the grid as a cook's treat. They were pretty damn good.
The pig shots were a big hit at the party! Luckily, I was able to snag a couple before they were all gone.

This Eliot awesome. Do you have any good method for keeping them warm? I made some for a party and they got cold. And they aren't nearly as good cold

Not only do they look delicious, they look like roses too. Very nice looking appetizers that I'm sure we're just as tasty. I've taken pig shots to our family Christmas Eve party the last two years and they're gone in just a few minutes. I guess Eggheads have a reputation.
Any road will take you there if you don't know where you're going.

Awesomeness!! I've never made those before. Did you have to par cook the bacon at all to get it to stand upright long enough to stuff it with cheese?

last time i made pigshots i was out of toothpicks. I used metal skewers instead. I think I put 5-6 shots per skewer. It worked like a charm. Super easy to handle, none of them fell over. And after taking them off the egg and cooling for a few, you just slide them off the skewer and they hold their shape. It will be my new method.
