Cow tongue

i just received 2 cow tongues. I am thinking of making cow tongue burritos. Has anyone tried this? Any tips?

    I have done a few on BGE, but prefer to boil them for a few hours, skin and chop for tacos de lengua ala Mexicana.

    I did one the other day. I skinned it (which was a pita) (I understand you can pressure cook for like 10 minutes and the skin is much easier to peel)  

    After skinning it I smoked it till it probed like perfectly done brisket and it was par excellent. Rubbed with Oakridge Black Ops and injected with Butcher bbq. (same stuff I use on my comp brisket)

    I like to wrap the tongue in paper when it's getting close and let it rest for ten minutes in the paper. After ten minutes I throw away the tongue and eat the paper. It's the only way I like my cow tongue.

    Only time I've had it, it was braised in a dark beefy sauce and served for breakfast in Mexico. It was fantastic.

    I do tongue in the crock pot. Easy and tasty.

    So is this a nostalgic thing?  I can't see eating cow tongue by choice unless it's something you grew up with.

    No., not nostalgia for me. 1st one I came across was maybe 30 years ago. Prior to that, I'd only read about it, usually as a choice for fairly high class lunches.

    Having already tried heart several times before I came across a tongue, I figured might as well, particularly because it was really inexpensive. (not any more)

    Once you get the hang of cooking it, you end up w. something that has a texture somewhat like bologna, but w. a strong beef flavor. It also absorbs smoke and spice flavors, so it tends to be a rich taste.

    It's tasty. I mean really.. how is eating a tongue that much stranger than eating the ribcage of an animal?

    There is an awesome taco restaurant near me that has the best beef langua tacos.  My wife and kids think I'm crazy for eating them but they're sooooo tasty.  Make sure and post pics.

    Growing up we ate all of the animal. Yes I did grow up pretty poor....not much different then today. Tongue USED to be a cheap piece of the cow. Not so much anymore. At 5.99 a lbs. it is more of a treat then anything else anymore. If cooked correct it will melt in your mouth it is so tender. Just my .02.

    Good point.  I would try it if given the opportunity.  

    At more than double the price of Angus brisket, I don't see buying it myself anytime soon.

    Tongue has been on the menu at NY Jewish delis forever. I have yet to try it. But I look forward to seeing some pics of your cook.
