My Vacation Cooks: Prime Rib, Butts, a new use(to me) for leftover pulled pork, etc. Pic Heavy!

I made the prime rib the day after Christmas. I over cooked the roast a bit but it was still good. 250* indirect and then I seared it with the torch because it's easy. Made some au gratin potatoes and steamed broccoli with it. All the pics are sorta out of order but close enough.

The next day I made some sweet and sour chicken (fried in the wok on the Egg) and beef lo mein with the leftover rib roast. I just cubed it up and threw it in, was awesome.


Cooked a couple butts for a New Year's Eve party and used the leftovers for a breakfast hash the next morning. Also made SGH's sausage loaf app(dusted it with some Smokin' Coals Rub) which was a hit although I forgot pics after the cook. It went too fast.






Tonight I used the last of the leftover prime rib from last week and made fried rice.

It was a nice couple weeks off from work, cooked almost every day and found some good ways to use up leftovers.

Can you share your recipe and method for the sweet and sour chicken? And lo mein? That looks absolutely fantastic.
i love that stuff, but it's too inconsistent when I buy it from resturaunts!

I use this recipe for sweet and sour chicken and it is absolutely awesome, much better than take out https://www.youtube.com/watch?v=G4Qr_Eqt
I didn't use a recipe for the lo mein, just cooked some noodles and drained, a little sesame oil and tossed to keep from sticking together. Sauted onions, garlic, broccoli, in wok with cottonseed oil. Threw in cooled noodles with oyster sauce and soy sauce and beef. Tossed around over high heat for a few minutes. Easy.
The peanut oil in the wok for the deep frying was around 375*F but difficult to keep it consistent on the Egg. No big deal though.In Manchester, TNVol For Life! -
