My first USDA Prime brisket

I bought a couple of USDA Prime packer briskets at Costco when I was in Dallas a few weeks ago and finally cooked one of them last night.  It went on the Egg at 7:00pm at 240 degrees after a minimal trim and a liberal coat of Meat Church Holy Cow rub.  After 15 hours I pulled and gave it the FTC treatment.  It was sliced a couple of hours later and served with red beans and rice and a Cajun deep fried turkey.  The guest thought it was terrific.  It definitely was more moist than a USDA Choice packer and the point had more fat and flavor.  No complaints since I paid less for the Prime packer than I usually pay for a Choice packer at SAMs.  Sorry, no money shots due to guest at the party.

    Thanks @bgebrent 2015 was a disappointing year for Razorback fans, but they did finish strong.

    Very nice looking cook.  My friends and family have gotten use to me taking photos before they are given the all clear. They all laugh when im fussing over the lighting and  plating
