Timing issue for New Years Day and Pork Chops...Help appreciated

My wife bought some beautiful 2" thick pork chops for me to cook on the BGE for New Years. I am going to be gone for most of the day. I have done some long cooks...butt, brisket, more butt, etc. I have also done several steaks, loins, etc. I haven't done pork chops, and honestly I haven't done a chop on the grill in years. I will only have a few hours to cook when I get home, and I was hoping one of you guys could help me out with a good recipe. I am out of town often, so I haven't had a lot of chances to cook on my BGE. I just need to make sure I don't ruin the day by not having my portion done. With 2 girls under 4 years old, dinner has to be ready so we can do all the other stuff before bed. I can do most of the prep the day before, if the recipe call for it. I'm in a bind and hope you can help me out with a great recipe. Thanks in advance.

  • Are you trying to do them low and slow?  Would think you can do them raised grid, direct in under an hour.

    Not enough fat on chops to do low and slow. I do them indirect at 375 and they take around 20 - 30 minutes or when they hit 145 IT I pull them. Just season with your favorite rub. You can do them direct at 325-350 but I think they turn out juicier indirect.

    Agree with raised and direct in under an hour. Most any pork rub is good for this cook.......but tell you the truth, I love the McCormick Smoakhouse Maple grill Mates from the grocery store as well as any. The maple sugars give a nice carmalized texture to the meat...... and great flavor. All the best....Go Sooners.....you know I had to do it.

    for me its salt and a 700 degree sear, pull them out and dust with zatar seasoning and more salt, get grill temps down to 350, then roast to high 130's and off the grill and rested on a rack for 5 minutes, no foil

    Either raised direct or reverse sear for me...if you want them smokey go with reverse sear... I like to season with whatever rub sounds good and then glaze with a sweet and spicy sauce.

    i agree with @JRWhitee low and slow is just not a good plan for this cut

    Another vote for raised direct at 350 - 375.  Put a chunk of apple in there for smoke. Flip every 10 minutes or so depending how far away the chop is from the fire.  Salt, pepper, and rosemary if you want to keep it simple.
