Yet Another Rib Roast

It was pouring rain yesterday, but my patio smelled great. Scored the fat cap, salted the roast, and rubbed on a garlic / olive oil puree followed by chopped rosemary. Got the Egg up to 500 raised indirect, put the roast on and shut down the Egg. Once the Egg reduced to 325, I stabilized there and cooked to 125 IT. 

Served it Hot Butter Love injected sweet potatoes courtesy of the BBQ Brethren's Smoke Signals magazine (injected with a mix of melted butter, honey, OJ and spiced rum), and roasted brussel sprouts. We were starving once we plated, so I didn't get a proper plated shot. It was delicious!
