Hey, gang… I just purchased a new XL Egg and they recommend I keep my first few cooks at 350 degrees or below in order to cure the gaskets. Any suggestions on what I should cook first and how? I'm only familiar with general grilling on a gas grill. I'm super excited to become as versatile as possible on my new toy..! Any help would be appreciated.

Welcome aboard and enjoy the journey. Regarding first cook, many will offer spatchcock chicken, the recipe for which is in the recipe section of the following link: There is a wealth of good ceramic cooking info on this site, as well. http://www.nakedwhiz.com/ceramic.htm ;

agree with above. Since you have an XL, do you know where you're going to put the new meat fridge/freezer that you will surely own at some point?Richmond and Mathews County, VA. @Jeepster47 Here you go. Big thanks to @lousubcap for introducing me to spatchcock chicken! It was literally the best chicken I've ever tasted! I'm wondering if anything can possibly not at least be amazing on the Egg... -
Welcome to therapy for the OCD grill meisters. Your first cook looks delicious. You can't go too far wrong with @lousubcap guidance, as he has helped me and others throughout this process.

That's much better ... with pics I mean. Spatched on the egg is awesome ... love it when I probe for temp and the juices come out 'cuz it's so moist. Do a search for splayed chicken ... that's another great chicken cook ... think @Mattman3969 has posted a couple.
