    Looks very good!  I love those little birds.  There's an Italian restaurant near me that serves them free as a before meal appetizer.  They serve one bird for every two people at the table.

    Nope, I've done it many times. But they sure don't look any better than the OP's bird!!

    I hate it when I go to the kitchen for food and all I find are ingredients!

    @caliking about 1 hour, they were perfect and done at the same time; stuffing helped with that...

    Nope, I've done it many times. But they sure don't look any better than the OP's bird!!
    I spatchcock them all the time. 400 direct/raised with a couple of bacon strips across the top (never flip). 
    Very nice bird OP. 
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    I guess it's not you ordinary Italian restaurant.  But, last year there were six of us that had dinner there and we were served three birds.  About a month ago, my wife and I had dinner there and got one bird.  It's not on the menu and you don't have to ask for it - they just serve it before the meal with rolls and a delicious bean salad.  The website mentions it: Marino's Italian Restaurant

    I've heard that they are selling poussin or young chickens as Cornish hen which Is a breed and are fully mature when slaughtered. The poussin are bigger so 1/2 a bird is a serving.

    Gary, the breed was developed in southwest England near Cornwall where the pasties come from. (as if you didn't know that already)

    They aren't too small to spatch! I do them two at a time on my small egg.
     1 LBGE, 1 SBGE, 1 KBQ and a 26" Blackstone near Blackstone, Virginia
