Blustery Cold Rainy Wintery Texas Chili Sort of Day

The title of this post didn't even mention 'how cold' it is here at the Chicken Ranch. 51° YES! 51°! Like FREEZING! 

And since it's a stay-inside/stay-warm/stay-dry day, it must also be a Chili day. 

So in usual fashion, we played with the recipe a bit to make it a little more exciting. 

The Chili mix came from Simply Texas, makers of their own spices and rubs and sauces and chili mixes. 

We stopped at their store in Old Town Spring last week to tell him about the upcoming Space City Eggfest that will be held in Old Town Spring next May 21st. Jay, the owner gave Judy a bag to try. So try we did, and it's pretty good stuff. Just enough kick to make it interesting. 

We even sous vide the meat that went into it. Not sure if it did anything but the chunks sure were tender. 

Naturally, there had to be cornbread. Yeah, I know its not on the South Beach Diet, but it's a Blustery Cold Rainy Wintery sort of day, and that carries some weight around here.

    Great looking rainy day grub right there. It's a balmy 68* here. Feels like spring, but it's starting to get dark, I'm confused.

    Even though here in the Mid-Atlantic temps are mid 60's to low 70's, I too find it hilarious that someone from TX would consider 51 as "freezing".  Lived there 3 times (DFW/SA) and I know that it gets down in the 20s-30s during the winter.  Now, THAT would be approaching "freezing".  Otherwise ... PSSSHHHT.
