First cook on my Egg. T Rex 16 oz. filet!!!!! (Pics)

So the wife picked up 2 filets for our first cook on our Small Egg. I had been pumped about this all day! After reviewing many posts on the forum, I decided to go with the T Rex method. Seared at 700 degrees for 90 seconds on both sides, then at 400 for 5 to 6 minutes on each side. Seasoned mine with a combo of Lane's BBQ Brisket and Ancho Espresso Rub and the Wife's with Beef U. Can definitely say the Egg was a great purchase and am looking forward to many more cooks!!!

i have to suggest you try cooking them on he egg in a cast iron skillet, takes them to the next level in my opinion.creates crust like no other -

@RRP can get you a Rutland gasket if yours fried doing your first cook at 700...

Had that in mind but did not have any that fit on the egg. A smaller cast iron skillet is the first thing on my wish list for Christmas!!slovelad said:Wow! Nice steaks !

Great cook-strong start right there. And +1 with @RRP and saw off the handle on a good sized cast-iron skillet.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
