You can stuff them with various goodies, roll, wrap in bacon and cook, quite raised direct for me to til bacon is finished-the thighs will be done but check to make sure-somewhere around 165*F.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

You can stuff with anything though. For example, leftover mashed potatoes.

If you have a meat grinder, you could make sausage. It's not as good as pork, but still good and MUCH lower in sat fat and sodium. Breakfast sausage, Italian or Mexican chorizo...

Joan's (Austin Egghead) recipe for Carne Guisada works extremely well with chicken thighs (as well as the beef in the recipe). Posted by Judy Mayberry. This stuff is DELICIOUS!!

These are all great ideas! I did some pretty good chicken bombs a while back that might be replicated.
I really like the fried chicken sandwich idea from @fishlessman!

Mix 2 parts bbq sauce to 1 part bottled Italian dressing. Marinate the thighs for anywhere from 15 minutes to 4 hours (ie, it really doesn't matter much). Do them direct at about 375-400, turning frequently until just a little crispy around the edges. Serve with any leftover bbq sauce (no Italian dressing).

I forgot to mention JERK! Get a jar of Walkerswood or Grace jerk seasoning and spoon sone on the thighs. Into a zip bag for a couple of hours (or more) and grill. They make both hot and mild versions of the seasoning.

Also, you could marinate in Goya Criollo for 2-3 hours, add some cherry for smoke and try this...

Yeah, should be able to. The Walkerswood stuff is pretty good. I just use the two in the right as a dipping sauce. I haven't marinated with them. I hate it when I go to the kitchen for food and all I find are ingredients!

One of my favorites for chicken thighs, that I got either from this forum or the original one:
Grilled Lemon Tarragon Chicken Thighs
1 lb. Boneless, skinless Chicken Thighs
1/6 cup Lemon Juice
1 tbsp. Soy Sauce
1/2 tsp. Smoked Paprika
1/2 tbsp. Tarragon
1 tbsp. Garlic minced
1/2 tbsp. salt Kosher
Directions: Marinate 30 min to an hour. Grill at 400 or a little higher to 165-170 .
