Strip Steak and Brussel Sprouts on the Mini

Got the Mini dialed in at 550° and let the CI get nice and hot, added the chopped bacon and let it get happy. Sorry bout the low quality pics but it was dark way early tonight.
Then added the chopped onions for a lil bit followed by the blanched Brussel Sprouts
After the sprouts were removed I let the CI heat back up and in went the strip steak right into to bacon grease.
Flipped a bunch and pulled @ 120ish I was crazy happy with the crust
The sprouts got a good dose of Sweet Chili Sauce.
All plated up

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"
