Sunday Prime rib luncheon

I've been hoarding a hunk of ribeye roast in the freezer for a couple of months, so on Sunday, my girlfriend and I hosted my sister, brother in law and niece over for a feast. So I did this prime rib style at 250 to 300 degrees Fahrenheit, for about an hour and a half, until it reached 111 degrees internal. I then took the indirect stone out, opened up the bottom vent and flame seared it until it hit 125 to 1 29 internal temp. The meat was served with garlic mashed potatoes, (amazingribs.Com ), green beans cooked in bacon fat, and a spinach salad with vegetables. Ribeye was seasoned with nothing but salt and pepper.
It was an outstanding meal.
