Onion Sausage

...smoked with Rum Barrel Wood Chunks. I also had a bunch of leftover potato innards from these loaded potato skins I made last night:

Didn't want all that starchy goodness to go to waste, so I whipped up a big bowl of mashed potatoes to go with the sausage and topped it with some mushroom gravy. Along with some fried okra drizzled with mustard based bbq sauce. Served on our finest China.
It ain't pretty, but it ate good.

@Gamecockeggman , Cone's Meat Market in Ridge Spring, SC. Most of their meats are local and they have THE BEST onion sausage and homemade cheese around. We usually go there every month or two and stock our freezers full of ground beef (when it's on sale), whole chickens, bulk onion sausage, linked onion sausage, pork chops, pork loins, SB chicken breasts, etc. We can get about 2 months worth of meat with extras for the two of us for around $150 to $200. Saves us a ton of money at the grocery store. Most of their stuff is local and hormone free. You can definitely taste the difference between their chicken and Wally World chicken. And we love supporting the local farmers as well. Awesome place if you've never been.

I haven't but I am going to check into it with that endorsement. Thanks. I usually get my onion sausage from the Happy Butchar in Lexington, if you haven't tried it you should. Also ask for some of Mr. ScottS jalapeño cheddar . It's awesome

I've been to the Happy Butcher a couple of times @Gamecockeggman . My wife got me some killer dry aged ribeyes from there a few years ago, plus I've had the Happy Butcher's onion sausage. It was excellent! For price purposes though and to be able to stock our freezers with fresh, local and low priced meats, we typically go to Cones to stock up. The chickens at Cones are about half the size you get at most grocery stores and the flavor is doubly better.

Hey, trust me...I only go there as a treat. His meat is very good but very expensive. I have been looking for a good option for bulk purchases that doesn't put hormone induced, antibiotic laden meat/poultry in my ice box. If your saying that Cones is that place, I first of thank you and second...I am on my way.Go Gamecocks!!!
