Bacon Wrapped Stuffed Meatloaf (Pic Heavy)

I wanted to make this today while watching my Cleveland Browns lose so that I'd have some sense of happiness... ;)

Chef Hobo's Bacon Wrapped Stuffed Meatloaf:

Meatloaf:
1 Pack of Meatloaf Mix
2 Pieces of Toast - Chopped Up
2 Eggs
1 Tablespoon of Pepper
1 Tablespoon of Salt
1 Tablespoon of Granulated Garlic
1 Teaspoon of Paprika

Mix the ingredients above in a bowl.

Cheese Stuffing:
2 String Cheese Sticks
Shredded Cheddar Cheese (or whatever type you'd like)



I had some cheap bamboo place mats that served perfectly, but you could use foil as well (or if you have a sushi making set, that would work as well).  Line with plastic wrap.



Mix well and place on plastic wrap.  Smash it out into a rectangular shape. 



On one end (whichever will be your starting rolling point), place the cheese sticks.  Sprinkle the shredded cheese as shown in the picture below.



Roll it up with the plastic wrap on the outside.  Be sure to NOT roll up the plastic into the middle.  Refrigerate while you make the bacon weave (yeah, we are going there).



Spray some vegetable oil onto some foil.  Create your bacon weave.  You can watch YouTube videos if you don't know how.  I used some reduced sodium bacon to be healthy. ;)



Remove the plastic wrap and using the foil, wrap the bacon weave onto the meatloaf.  Wrap with foil and place in the refrigerator while you warm up the grill.



Heat the grill to  350 degrees.  Use the indirect method with foil over the plate setter (unless you like huge messes).  I also spread a small handful of hickory chips on the coals before inserting the plate setter, but that's optional.



Once the internal temperature reaches 160 degrees (about 45-50 minutes), brush on your favorite BBQ sauce.



Once it reaches 165 - 170 degrees internally, pull it from the grill and let it sit under foil for 10 minutes.  Enjoy!!!
