Getting ready to put a couple of boneless pork shoulders from Costco on at midnight. Inspired by @YukonRon 's ribs I'm trying some Peach Preserves and Rub on these butts. I'm using my Stoker Wi-Fi to keep a 240 temp all night.

Waiting for the smoke to clear, a little before midnight.

I did butts too. They were awesome. You will enjoy them. I added a tablespoon of the peach preserves into the BBQ sauce, after shredding. Everyone that tried it on the pulled pork absolutely loved it. Good luck and enjoy."Knowledge is Good" - Emil Faber

Cool. I will add a little to the sauce, as well. Thank you. Right now, predictably, after about 7 hours the butts are in the stall (156F and 157F). Looks like all is going well. (knock on wood)

Cool smoke shot. I bet the neighbors thought some fog was rolling in.

Pulled at 203 (approximately 18 hours). Bumped it up to 260F for the last four hours.

Resting for a bit now.

Pulled... Very delicious meal. I can definitely recommend the peach preserves. Great bark!

It was very good, thank you. The one thing I wasn't sure of was how hot I dare go with the peach preserve layer on the butt. I decided to error on the side of caution and do the low temperature overnight cook, as opposed to the turbo style cooks I have been in the habit of doing in my last few pork shoulder efforts. I will also add that a light spray of high temp oil on the grill is a good thing (think Pam canola). Also, those black little chunks on the butts in the photo above are actually peaches (if it wasn't obvious). I just plucked those off at the end.minniemoh said:That looks good.
