Haven't egged anything in 2wks since my arm incident. Still don't know what happened to my arm. Even after many tests etc. which is frustrating to say the least. Still swollen & dull pain but, I digress. Tonight's meal started off with a simple spatchcock and watching some Husker Football.
Thin coat of Dukes Mayo and dusting of Southern Soul Dust on the Spatch.

Went until the thighs were at 180℉ and the breast was at 160℉ allowing for some carryover.

We decided on tacos. Pico de Gallo, Guacamole, Pinto Beans, shredded cheese and sour cream.

Now we're watching our 2nd team Geaux Gators
The Egg was hot and Lili Ann was patient so...

Hope y'all are enjoying your Saturday.

Better to get better slowly then not at all.

Blake...guess I have been brain dead, but I didn't know about your arm problem. Is it muscle or bone pain? Rotator cuff? Swollen like in an infection? Can you lift your arm? Move it in a circular motion without intense pain? Any sign of bug bites or stings?Re-gasketing the USA one yard at a time!

I am also like @RRP I also didn't know about your arm Blake. I am sorry, and I hope you will be better soon. This was a great looking cook though.Louisville, GA - 2 Large BGE's

@RRP & @johnkitchens yes some sort of bug bite, spider or unknown infection from two Friday's ago in my left elbow. Getting better but, it has been slow going. Hopefully after this 3rd set of antibiotics it'll be back to normal. Thanks.

Blake, will you consider a strange sounding aid to ridding the insect bite poison that is still in your body? This is no lie! Drink one Guinness Extra Stout every day until the poison is gone! Not 2 but just 1. Laugh at me all you want, people, but I had a doctor who was bitten in Africa and he was in intense pain for months and his doctor finally ran across this strange remedy! You might try it! But just 1 a day!Re-gasketing the USA one yard at a time!

Blake, get well soon. Your cooks look amazing. As odd as it may sound, I have heard ( yeah in a bar, so you know it has got to be gospel ) of the stout remedy as well.
Be careful of the bite. Those things can be nasty. By your description I thought it may have been a scorpion.

Dang Husker.......hate to hear that about your arm. Always builds anxiety when you feel bad and doctors can't figure out why. Glad to hear your moving in the right direction. Glad you are back and thanks for sharing the spatchcock cook.
