Left Over Brisket

I did a brisket over the weekend that was okay. Looking to do something different with the left overs. I've done nachos, pizza, chili, and tacos. Was wondering if anyone had done a brisket gumbo? I did a search on the forum and didn't turn up many results. Is it a waste of the brisket? What do you say @cazzy @SGH @nolaegghead

Food processor the brisket. Warm in broth. Serve on toasted hoagie buns with sautéed onion, mushrooms, peppers, cheese... Of course toast in the oven. Duke's mayo.

I would do a delicious beef stew (as opposed to the other kind ). Give the vegetables a head start since the meat is already cooked. You can add some starchy stuff like barley or taters. Serve over rice or spaetzle noodles (German, super easy to make).

@saluki2007 , my wife's family, from Ohio, make a beef noodle recipe, that uses stew meat and the kluski noodles. Not sure if you know anything about that dish or not. It seems pretty common in that neck of the woods of Ohio (mid-Ohio). I think the Amish make it too, and called Amish Beef and Noodles.
I think that would be a great dish too for left over brisket. Make a nice thin beef gravy, add noodles and brisket and serve over mashed potatoes.
You may get the diabetes after it, but it would be good, I bet.------------------------------

Leftover brisket is something my family loves! Our staples are brisket nachos, tacos, omlettes, pizza and queso. Be adventurous as there really is no wrong way to use it.Just a hack that makes some $hitty BBQ....

Sorry that im late to the draw here. Im still stuck on night shift and just saw this. But with that said, everyone above has already covered the suggestions that i would have made myself. @cazzy suggested tacos above. These are one of my favorites. Especially soft tacos. Again my apoligies for being late.
