Clams

Went to the coast a few weeks ago, dug our own clams, these came home and went on the egg.  Damn good eats.

    What was the dome temp? Did you freeze them, or keep the fridge cold? Do they pop open when cooked, as I've read?

    We picked them on a Sat, let them purge in a bucket of water that we would change out every few hours, untill we got back home monday afternoon.  Cant remember what dome temp was, but it was hot.  Yes they will open up when thier ready.

    Luv clams  any way.  Old clammer told me 20 some years ago that you should  take a 5 gallon bucket full, place in bath tub with 2 cups course corn meal and 10 lbs ice next day nice and clean and chilled.  I like to take some small ones place little butter, fresh garlic, white wine and chopped parsley and steam in a wok when open either just dip crusty French bread or place over some pasta with some parsley for garnish.

    the story or 'advice' is something that you hear every now and then up here (New England):  put the clams in a bucket of water with cornmeal, and they will injest the cornmeal (being filter feeders, and pass whatever else is in their system, thereby cleaning themselves, getting rid of whatever disgusting is in their clam bellies. 

    But it's BS. Sounds great, sure, but doesn't work. For one thing, freshwater isn't a good idea with clams. The other is that it just doesn't do anything except sound cool. And you don't want to purge the clam bellies. It's where the flavor is (with steamers anyway). 

    The rationale is also to rid the clam of sand, but sandy clams are sandy because the sand is in their shell, not their digestive tract.

    i'm not sure what your old clammer was trying to accomplish, because without water you just had clams covered in cornmeal?  ...but the water is a bad idea. Even if it were seawater the clams wouldn't benefit from it. Because if they are dirty, it's not their digestive tract that's dirty anyway

    We purged them in clean water.  After a couple of hours, the water would be full of slime, assuming purged from the clams.  When the water stayed clean, we ate them.  Nothing special on serving, hell most of them didnt make it from the grill to inside the house.

    This I like^^^^^^^^. I do the very same with oysters. They leave the cooking grate and go straight in my mouth. I don't **** around when it's time to eat =)

    But it's BS. Sounds great, sure, but doesn't work. For one thing, freshwater isn't a good idea with clams. 
    What Darby said above also applies to purging crawfish. It doesn't work. All saltwater does is kill the crawfish. All they need is a washing in freshwater until the water runs clear. It's the mud on and in the crawfish shells that causes issues. Not their digestive tract.  A lot of folks will argue against this, but they are dead wrong.  Clean, cold water until it runs clear and your crawfish are ready to go. If you must "purge" or clean out crawfish, the proper way to do it is to hold them in a tank with a aerator to keep them alive. Simply withhold food for 48 hours and your crawfish will be emptied out. They only time that I take this extra step is if I'm steaming them instead of boiling them. Or when doing a small amount to turn in at a event to be judged. Short of this I simply wash them.

    Witholding food is the way to do it if you wanna do it. Same for lobster. We usually eat lobster right away, but if you go 24/48 hours they will purge themselves. You'll wanna rinse them thoh
