Thai-ish coconut curry butternut squash chicken soup
Legume

cubed up the butternut squash, marinated with some fish sauce, sesame oil, mirin and lots of spices, then into a mesh pan, raised direct at 400 to cook and caramelize.
chicken breasts butterflied into three pieces, pounded, marinated in lime juice, rice wine vinegar, sesame oil, touch of soy sauce, spices, red pepper flake, touch of brown sugar, lime zest, yada, yada
Sweated some finely chopped onion in coconut oil with garlic and ginger, added coconut milk, chicken broth, lime juice and a slug of green curry sauce. Add the squash and hit with the stick blender.
Flash grilled the chicken at 700 (left the vents open a little long) to get a quick chat, but a little underdone. Chopped up the chicken and add to the mix along with some finely chopped fresh basil, squeeze in another lime +zest and done. First soup of the season, no pics of chicken and soup really isn't photogenic, but you get the idea.

Great stuff. Pumpkin and/or squash soup is one of our favorites in the fall. Do you hit it with a little smoke?

Sort of on the smoke - I was using royal oak and there was probably some leftover chunks of oak in there somewhere from previous cooks. The squash definitely had a smokey-char flavor to it which is what I was shooting for.Darby_Crenshaw said:Great stuff. Pumpkin and/or squash soup is one of our favorites in the fall. Thanks y'all. Tons of leftovers, may have to make some kind of wings to go with it today.
The air is definitely cooler here at night now and I love it. Forget Summer and Winter, the transitional seasons Spring and Fall are my favorite by far.THANK YOU FOR YOUR ATTENTION TO THIS MATTER
