Cooking in plastic

Good evening everybody.....quick question, I have a friend who says that he cooks his ribs either wrapped in plastic wrap with foil around it, or he will seal the ribs in food saver bags, wrap the whole thing in foil, and cook them that way....anybody heard of this before....if so, good idea, bad idea???    tks

    He's braising them.  You can do this with just foil or a crock pot.

  • I don't see how you would get any smoke on the ribs. I think this would be like steaming the ribs. I would ask them why? Each to his own.

    No smoke if you have them sealed up.  Might as well use the oven.

  • In the smoking 101 class I took last month, I learned about steaming ribs.   No smoke on them though.  We steamed them in a dutch oven with the lid on...no plastic wrap.  I'd skip the plastic wrap for fear of it melting or giving off some toxic fumes.

    I actually have a good friend that does this very thing. I dont understand it, but to each there own. Just my opinion but it totally ruins the texture to me. Not to mention not even a hint of smoke. It reminds me of Applebees ribs. Akin to mashed potatoes covered in sauce. Hey, but if he likes it, then so be it. But its not for me. I will take good clean oak smoke over Saran Wrap everyday of the week.
