So....this Egg newbie went to school today...

....and learned so much!! I attended the Seattle BBQ and Grilling School Smoking/BBQ advanced class today. It was tons of fun and we prepped and ate TONS of amazing food! On the menu:
Porchetta
Tri-tip
Meatloaf
Chicken lollipops
Leg of lamb
Ribs competition style, done 3 ways
Armadillo eggs
Wedge salad
Grilled vegetables
Chocolate cake
....and probably a few more things that I can't remember.

Cheers-allsidI've attended 2 classes: 6 hour smoking and grilling class, AKA the 101 and the 201 advanced BBQ class (yesterday). Erin taught the first class, Cam the 2nd. Both men seemed to know their stuff.
It's not mandatory to complete the 101 class before taking the 201, especially if you have some experience already.
