Working without a net; no, Honey, there's no back up plan. And not telling either of them about the shot I found while spatching, rinsing and rubbing these 4 daffy birds my buddy laid on me.
Scored the skin and rubbed with 2 parts blues hog, 1 part Montreal, one part cornstarch. They're resting in the fridge now. Unless someone has a better idea, the plan is to put them over a drip pan, running indirect @ 400, at 1/2 time during the Eagles-Cowboys game. Will it still be a game at the 1/2? Not for the tailgaters who've been at the Linc since the gates opened this morning.

I seriously love the quack bird, but TBH, this was too gamy for me. Most things I'd rather cook myself on the egg (steak, ribs, brisket, chicken -- the list goes on). In this case, I think I've found something that in my case may be best left to the pros.

A simple brine is an easy way to get the gamey taste out. I usually do that when I have ducks to cook, works well on any "gamey" meat I've done. Buttermilk works too, and I've been told that Italian dressing does also, but I've never tried it.BGE XL- Tomball, TX

@lewisj82 -- thanks for the brining tip. I'da thought a bird with so much fat wouldn't need it, but it's a different consideration (brining to de-gamy vs. brining to enhance juicy).
I wonder, too, if separating the parts rather than spatching would have helped? I was hoping for some thigh meat, but these birds had zero thigh to eat. Could be b/c they don't run (i.e., not much tasty muscle in the leg/thigh area).
In all, it was a semi-demanding and fun cook. A bunch of prep and happy family. I'm always my toughest critic, and always looking to build a better mouse duck trap . . .

Looks excellent - you nailed med rare. duck is a bit of an acquired taste for sure - if you get it 30 seconds past med rare it starts to get a little 'liverish' in flavor...
