Thinking about getting this
Wusthof Gourmet Hollow Edge Brisket Slicer 10-inch or 14" more likely. Any one have an opinion?

I have the 14" and love it. Works great for slicing a large brisket or other large cuts.

Stays sharp with proper use?
-
I've only used it about a dozen times - still sharp as when it got here.

I went with @cazzy 's recommendation and ordered the following from Amazon: (many of us forum users did)
http://www.amazon.com/gp/product/B004NG98RI?psc=1&redirect=true&ref_=oh_aui_detailpage_o07_s00
P.S.
I then ventured out on my own and ordered the following setup to sharpen it, though many say these knives hold their edges for years: (I like this sharpener and it comes with instructional dvd)
http://www.amazon.com/gp/product/B000Q9C4AE?psc=1&redirect=true&ref_=oh_aui_search_detailpage
Edit: I notice the Prime price right now is $24.16 which is $9 cheaper than what I paid for it back in March.

I bought the same knife @mahenryak purchased. If it's good enough for Aaron Franklin, it's good enough for me. Used it last weekend to cut up a brisket. Purfect.

That is a good price...it does fluctuate on Amazon. Worth every penny! You won't find a cheaper and better performing knife to cut some Q, especially brisket!mahenryak said:I went with @cazzy 's recommendation and ordered the following from Amazon: (many of us forum users did)

Most commercial food processing places use Dexter Russel knives. All our local fish houses and butcher shops are using them. If it's good enough to do for a job and use it all day it's good enough for my twice a week bbq obsession.XL, Small, Mini & Mini Max Green Egg, Shirley Fab Trailer, 6 gal and 2.5 gal Cajun Fryers, BlueStar 60" Range, 48" Lonestar Grillz Santa Maria, Alto Shaam 1200s, Gozney Dome, Gateway 55g Drum

There are actually several great slicers on the market. It comes down to how much you want to pay and if you want bragging rights. With that said, for the money, both FV & DR are great knives. I own and use both. I don't think I even own a expensive knife anymore. The above named two brands serve me well. I was shopping on Amazon for a new Beast and saw the DR on sale for 24 bucks and grabbed it too. I'm a sucker for sales. Hey, if the DR is good enough for the Gods, it has to be more than good enough for us mere mortals. They had a great deal on the Beast as well.

Location- Just "this side" of Biloxi, Ms.
Status- Standing by.
