Beef chuck ribs, stuffed flank steak, hatch chile ABTs, pineapple mango chutney chicken

a few recent cooks that I haven't had time to post but still been trying cookdid the ribs and frittata yesterday with the nachos for the UT game. 5.5# prime beef seasoned with Mickey coffee rub and smoked with hickory and apply for 7.5 hours. Nachos were left over meat soup with beans/chili, cheddar, avocado and salsa. Frittata had chorizo, egg, cream cheese, cilantro, tomato, onion and bell pepper.






Had a batch of hatch chills and jalapeños stuffed with cheddar, chive, cream cheese and DP dizzy dust and wrapped with bacon. Next some chicken thighs seasoned with oak ridge competition chicken rub, then glazed with some mango chutney before coming off and topped with green onion and grilled pineapple, served with cauliflower rice
Flank steak butterflied and stuffed with refined beans, hatch chiles, onion and seasoned with DP Fajita-ish, served with grilled corn and avocado salad

That's a lot of great looking food, but the pic of the finished ribs really makes my mouth water.

Great looking grub brother. I especially like the stuffed flank steak. I made some a few days back (pinwheels) and they were great. The only thing, most of my cheese ran off. Didn't have much time to experiment with it and get it perfected. But I will be doing it again. Again, great looking grub my friend.
