what grade do you use when cooking brisket?

Cooked a wagyu brisket recently. First one of this grade for me . Was almost too rich for my taste. Cook went perfectly. I think I prefer choice plus or prime. Has this been others experience?

It is a matter of taste and personal choice. Everyone likes something different. With that said, I prefer Wagyu Gold by miles. Its not even close in my book. I like the deep "rich" taste that you mentioned.etherdome said:Was almost too rich for my taste.
