Pig Cakes, Round 2

So we went to the Coop Fest this past weekend and served up our Deep Fried Pig Cakes, Not So White Salsa, and Fried Jalapeno Cheese Sausage. I think they all went well.

While on the way back we worked on how to do these on the Big Green Egg.

Once we got back we went to work. First I wanted to try one other version, Chicken Fried Pig Cakes.

So with buttermilk, eggs, heavy dose of It's My Rub Power Blend and Louisiana Hot sauce for the "Wet" and AP flour and another heavy dose of It's My Rub Power Blend for the "Dry", it went like this. And yes we did a double dip. Wow this were incredible!


So now back to cooking these on the Big Green Egg so we may do these at an Eggfest someday.

We switched out the panko bread crumbs for Capitan Crunch cereal. Loaded the Captain crunch in a small chopper and went for a medium to small size. Fired up the large Big Green Egg to 400.

On a well oiled grid saver, loaded them on for a 10 minute ride.




I must admit, being from Texas and home of the Chicken Fried Steak, the chicken fried is my favorite.

That said though, the ones we cooked on the BGE are the closet to the texture of a great crab cake. And that was my original mission at the start on this journey.

    Thanks. I will let Kelley and Bruce know. I did some pecans with the Its My Rub Smooth Blend and that is now my go to for nuts.

    You should make a batch of the Not So White Salsa and let me know what you think. It's best when you let it set for about 4-5 days.

    Looks great. This reminds me, I still haven't replicated your dip either. It' WILL happen this weekend.

    Jeremiah just google "Not so white salsa" and the recipe should pop up on the first line. It is posted on Kelley and Bruce's web page. If you have any questions give me a shout. Remember it is best if you leave in the fridge for at least a day. Better after 3 days.
