Beef Chuck Short Ribs

went to RD to pick up some beef back ribs. They only had once pack and it looked like hell, so I picked up the short ribs. They're going in the egg at 9:30.
Setup: indirect with AR. Three levels. 225, oak for smoke, salt & pepper, Dukes mayo.

Great cook right there-if you are running 225*F on the dome the cook will be quite protracted. I run around 250-270*F on the dome and the short rib cooks always go for a good six hours. Toothpick test for the finish. Enjoy the eats.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

i LOVE short ribs. I have done mine at 275 typically and they come out EXCELLENT.
